Makes Makassar Special Konro Soup

Have beef ribs but confused what to cook? Try only konro soup, Makassar's special menu which is guaranteed to be addictive. Let's try the recipe.

  • 1 kg of beef ribs (to taste)
  • 100 gr beef, cut into pieces
  • 150 tamarind water
  • 3 lemongrass stems, take the white and memarkan
  • 3 clove grains
  • 2 cardamom pods
  • 2 sticks of cinnamon
  • 2 chives, cut into pieces
  • 2 cm galangal, bruised
  • 5 bay leaves
  • enough water

Ground spices:
  • 10 cloves of shallot
  • 7 cloves of garlic
  • 3 fruit shells
  • 2 teaspoons pepper
  • 2 cm ginger
  • 2 cm turmeric
  • 1 tablespoon coriander
  • 1 teaspoon cumin
  • 6 candlenuts
  • 3/4 of the nutmeg
  • salt to taste
  • oil for sauteing
How to make:
  1. Boil water until it boils. Add the ribs and beef. Remove the foam and cook the meat until tender. Strain the broth with the meat in another pan container so that the sauce isn't dirty. Boil again.
  2. Saute ground spices until fragrant, add lemon grass, bay leaves, and galangal. Saute again until the spices are cooked and fragrant.
  3. Pour the seasoning into the meat pan. Mix well and cook until boiling. Add cloves, cinnamon, cardamom, tamarind water and salt to taste (if it doesn't taste).
  4. Add the leeks when cooked. Turn off the heat.

Konro soup is ready to be served with sambal and hot rice.
